Obituary for Park Gee Huey Choi

Park G. Huey Choi, beloved mother, grandmother, great-grandmother, and great-great-grandmother, passed peacefully to her heavenly home on March 18, 2021. Born February 25, 1924, she grew up in the Taishan region of Guangdong Province, China. She survived the hardships of the second Sino-Japanese war and the Chinese civil war, including fleeing by foot with her infant from village raids and bombings. Following the Communist victory in the civil war, she entered Hong Kong with her two young children in 1954 in pursuit of freedom. After enduring years of family separation, she emigrated to the United States in 1958 to join her husband, settling in Houston. After she was widowed in 1969, Park supported her young family by continuing to operate the family grocery store, then as a commercial prep chef and a childcare provider.

Park was a loving and nurturing matriarch who played a key role in rearing four generations of her large extended family. She maintained an abundant vegetable garden and was a talented seamstress. Independent, strong, and fierce, she was also dignified and elegant. Park enjoyed a hearty laugh with family and friends and had a sense of whimsy. Above all, she was faithful and loved the Lord and, by her example, shepherded her children to follow in her faith.

She was preceded in death by her beloved husband, Edwin S. Choi, father Soon T. Huey, mother Lau H. Huey, and grandchildren William Kong and Gloria Kong. Park is survived by her children, Evelyn Kong, Gene Choi (Wanda), Carolyn Choi Louis (Wake), Madelyn Choi (Kim), and Ronald Choi (Kamie); grandchildren James Kong (Maria), Gerald Kong (Yolanda), Angela Trinh (Quyen), Jonathan Choi (Elaine), Matthew Choi (Justine), Mark Choi (Chrissy), Edwin Choi, and Nicole Choi; seventeen great-grandchildren and two great-great-grandchildren; her brother, Kenneth Huey; and five nephews and nieces.

Visitation is on March 24, 2021, 5:30-8:30 pm at Winford Funerals, 8514 Tybor Dr., Houston, TX. A private burial for family will take place on March 25, 2021. A memorial service is being planned for a future date.
